Hermós Corpinnat (2018)
This is Pardas’s first release in the United States of “Hermós,” the sparkling wine it began making since joining Corpinnat (a portmanteau that roughly means “heart of Penedès”), a breakaway collective of producers focused on making high-quality sparkling wine, providing an alternative to the mass-produced bottles released as Cava. Made with base wine from the 2018 vintage, it's a blend of 69% Xarel.lo and 31% Sumoll, from four different vineyards. The varieties were cofermented with native yeasts in stainless steel tanks and the wine was aged for six months in stainless steel vats and then for 36 months in bottle. No dosage. It’s vibrant, with a great juxtaposition between citrus and red fruit. Complex, mineral, with great length.
