A Difficult Update

Field Friends,

We received some hard news from the bureaucratic powers that be last night. We want to be fully transparent with our people, and to rip the band-aid off fast we are going to be limiting our menu significantly for the next bit. While we employ incredible safety standards and our kitchen is run by beautifully skilled, caring, experienced folks who are beyond incredible in what they do, the Tacoma-Pierce County Health Department has decided that we need to provide an additional level of refrigeration that, on a practical level, is beyond necessary to push out what we have labored hard in providing over the past 14 months.

This decision was made by the Health Department during a routine inspection last night. We want to ensure you that not one person has been sick from eating here, not one person has raised concern, our food is glorious and has always been incredibly safe to eat. Over the last year of the restaurant being open and the continual movement and changes of allowances with COVID, we misinterpreted portions of the refrigeration allotment, and what we could provide on a capacity level. We also absolutely take responsibility for our own starry eyes. After seeing what we could accomplish in this space safely and deliciously, we didn’t question it. The feds hold us to the same standard as any food establishment despite skill and experience, which is unbelievably frustrating considering how much energy we pour into safety and care. Our work to make a vibrant menu in this small space has been very laborious in sourcing and processing in order to provide clean, seasonal, locally sourced food to offer you, our people. And we love doing it.

This disruption has really thrown a wrench in our systems, and we are immediately working on tangible ways to get back to what we are known for in providing beautiful food and drinks. Working within the desires of bureaucratic systems, we ask that you send us some good vibes for the smoothest possible process in getting everything buttoned up. We aren’t exactly sure how Field will operate in the interim, however we believe it will resemble the OG bottle shop days along with a more chill wine bar vibe.

We’re okay, but we’re not great. This has punctured our momentum and drive, but we trust that we will be back soon in our full capacity. In the meantime, maybe join our cool wine club, make us a regular stop for picking up bottles, or hit us up if you’d like some goods delivered to your house.

We’ll have more information about our bottle shop hours next week, and our Thanksgiving Larder Days will absolutely be in full swing. For today and tomorrow, we’ll be open at 12pm for retail, and then we’ll do a chill snacks and drinks menu from 4pm-8pm. If you’re out and about, come kick it with us.
